WHAT DO WE USE?
With only seven ingredients selected in Italy.
The ingredients of pesto are few, but the quality of each one contributes to a unique flavor that truly makes a difference. Many of our ingredients are PDO certified or come from supply chains that have characterized their territories for centuries. It’s not just about making good pesto.
HOW DID WE FIND THEM?
We set out to find the ideal flavors, but we found much more.
We traveled across Italy from north to south, driven by curiosity and the desire to truly understand what lies behind each ingredient. We found people, different accents, skilled hands, and traditions carefully preserved with pride.
We went to listen to stories, smell aromas, and touch the land. From Ligurian basil to Sicilian salt, each stop was a meeting with those who safeguard Italy’s truest flavors.
HOW DO WE MAKE IT?
With an amazing automated mortar.
The mortar is the only way to make pesto properly because it preserves the basil’s properties. At Boccamatta™, we have patented an exclusive automated mortar for a process identical to the traditional one and a pesto with an aroma that makes your mouth water.
WHO WE ARE?
We are Nicholas Diddi and Anis Hafaiedh.
Boccamatta™ was born with us, Anis and Nicholas, two young entrepreneurs. As true Genoese who love pesto, we want to revive a dying craft. We work day and night to reproduce and innovate the ancient process.
After 3 years, we have finally created a pesto that embodies work, culture, ingenuity, and simplicity, unleashing more than a scent: a journey through time.
